{"id":2551,"date":"2026-02-28T14:47:35","date_gmt":"2026-02-28T05:47:35","guid":{"rendered":"https:\/\/okumasa.okinawa\/2026\/02\/28\/okinawa-ingredients-certified-restaurant-chef-arasakis-second-shop-has-been-registered\/"},"modified":"2026-02-28T15:18:21","modified_gmt":"2026-02-28T06:18:21","slug":"okinawa-ingredients-certified-restaurant-chef-arasakis-second-shop-has-been-registered","status":"publish","type":"post","link":"https:\/\/okumasa.okinawa\/en\/2026\/02\/28\/okinawa-ingredients-certified-restaurant-chef-arasakis-second-shop-has-been-registered\/","title":{"rendered":"[Okinawa Ingredients Certified Restaurant] Chef Arasaki\u2019s second shop has been registered!"},"content":{"rendered":"\n<p><strong>A familiar Ryukyu pinewood plaque with Governor Denny Tamaki\u2019s name has arrived at OkuMasa.<\/strong><\/p>\n\n<p>We take pride in what may be Okinawa\u2019s most diverse use of Yanbaru island vegetables, and we make full use of Yanbaru young chicken, Motobu beef, and seafood from our local fishing ports throughout our courses.<\/p>\n\n<p>Okinawa is said to have 21,331 food and beverage businesses (as of July 2025).\u6c96\u7e04\u770c\u5185\u306b\u306f\u3001\u98f2\u98df\u5e97\u304c 21,331\u4ef6\uff082025\u5e747\u6708\u6642\u70b9\u306e\u30c7\u30fc\u30bf\uff09\u3042\u308b\u3068\u3055\u308c\u3066\u3044\u307e\u3059\u3002<br\/>Among them, 479 restaurants are registered and introduced by the prefecture as \u201cOkinawa Ingredients Certified Restaurants,\u201d recognized for actively using Okinawa-produced ingredients.<br\/><strong>In other words, restaurants that proudly champion local ingredients and continue to share their value are still only a small fraction of the whole.<\/strong><\/p>\n\n<p>And with this registration, there are now two certified restaurants associated with Chef Arasaki among those 479.<br\/>We don\u2019t see this as the goal\u2014if anything, we see it as the beginning.<\/p>\n\n<p><strong>So we can broaden the value of Okinawa\u2019s ingredients, producers, and communities\u2014starting from the kitchen and the dining table.<\/strong><br\/>So that the appeal of local ingredients is communicated accurately, chosen with intention, and sustained for the long term.<br\/>We\u2019ll keep working as one restaurant on the ground to support the growing movement of peers who take on the challenge of becoming an \u201cOkinawa Ingredients Certified Restaurant.\u201d<\/p>\n\n<p>And to make sure that support doesn\u2019t end as mere words\u2014<br\/><strong>As Chef Arasaki\u2019s restaurants, we aim to continue increasing the number of shops that actively take on this initiative.<\/strong><\/p>\n\n<p><strong>For that, we are currently looking for teammates to build the restaurant together with us.<\/strong><\/p>\n\n<p>What we aim for is \u201cthe best taste\u201d and \u201chuman comfort,\u201d unconstrained by any single genre.<br\/>From shabu-shabu and Western dishes to spice-driven cooking like curry.<br\/>Grounded in Okinawan ingredients and the seasons of Yanbaru, we craft cuisine at a level we can be proud of worldwide\u2014bringing together Okinawan tradition with techniques from many countries, guided by both skill and heart.<\/p>\n\n<p>Respect for island ingredients and the producers behind them, prep work done without shortcuts, a commitment to keep learning, and sincerity in delivering everything straight to the guest\u2014those qualities, including that sense of \u201cbeing good as a person,\u201d are what we want to build as a team with the right people.<\/p>\n\n<p>\u201cCreate world-class excellence with Okinawan ingredients.\u201d<br\/>Standing on the front line of that challenge, we have nurtured OkuMasa here in Kunigami Village, part of a World Natural Heritage region.<\/p>\n\n<p>When we say \u201cworld-class,\u201d we do not mean food built around flashy plating or performance meant to surprise.<br\/>Not \u201cInstagrammable\u201d food, but food that sinks into the heart and body.<br\/>What matters to us is drawing out\u2014without unnecessary fuss\u2014the aroma, sweetness, and strength that Okinawan ingredients already carry.<\/p>\n\n<p>By stacking up careful work, even a child can know it\u2019s delicious from the first bite\u2014and after the meal, the body feels quietly grateful.
